About us

The Stills & Distiller

All our single malt is made in our beautiful copper pot stills. Owner and distiller Josh Walker will usually have the still operating six days a week; bubbling, steaming and producing new make spirit to make our liquid gold. Talk to one of our well versed distillery team, read through the history of illicit distilling in the area and of course.... make sure you experience a Whisky Tasting or one of our 'Aussie Blocks'.

Josh grew up in Timboon and started his own farm contracting business at the age of 17. Move forward several years and the passion for whisky lead to the purchase of the distillery. Having traveled the well worn whisky paths across Europe and America, learned the trade and experienced first hand the boom in the world wide trend to drinking premium spirits, Josh is now a respected member of the rapidly growing Australian single malt distilling industry. Josh and his wife Caitlin, along with Josh's family, are all involved in the operation, creating a great working atmosphere for this booming business.

PS: Josh also breeds his own grass fed, black angus beef which is used in the distillery kitchens and is also available in fresh and frozen take home packs from the distillery. Check out ABecketts Creek Beef.

Aussie Craft Spirits

The whisky we make at the Timboon Railway Shed Distillery is a true single malt whisky. We use malted barley as the only grain ingredient processed in our mashing shed. Josh's inspirations are the great single malts of Scotland and the Isles, so it’s only natural that our whisky is made to the same time-honoured traditions. We've been making true small batch, Australian craft whisky on site since 2007. In 2020 we installed a second, much larger still, and established our own Cooperage, known as ABeckett's Creek Cooperage.

As well as our Single Malt Whisky range, our portfolio of spirits also includes our renowned Coffee Cream liqueur, Strawberry Schnapps, a classic Limoncello, a Salted Caramel whisky liqueur, Rum and 12 Apostles Australian Gin

We are proud to support other craft distilleries with our 'Aussie Craft Spirit Wall'. It's the largest display of Aussie Craft Spirits at any distillery in the country!  185 spirits from 92 Distilleries and growing every month. You can do tastings, enjoy by the dram or purchase take home bottles. One of our well-informed Whisky Crew members can guide you through them. Tastings are available on them all! (fee applies)

The Shed

The Timboon Railway Shed Distillery offers a true distillery experience with a deep sense of place—where history, craft and character come together over a fine dram. Set in a beautifully restored 1800s railway shed, it's the perfect spot to pause, taste and take in the spirit of the region.

Pull up a seat at one of our barrels and explore the full Timboon Whisky experience. From curated tasting paddles to handcrafted cocktails, locally brewed beer and regional wines, there’s no better way to immerse yourself in the flavours of southwest Victoria.

Our covered deck offers a relaxed setting for a casual lunch (bookings recommended), but the heart of the experience lies in the whisky—shared, sipped, and savoured.

We're ideally located alongside the Timboon Rail Trail and now connected directly to Timboon Fine Ice Cream via a newly built footbridge—making your visit even sweeter. Whether you’re starting or ending your day here, Timboon Distillery is a must-stop along the 12 Apostles Food Artisan Trail.
