The most anticipated – and most unconventional – release of the year has arrived: Hamsky, our limited-edition collaboration with artisan butcher Brendan Bouchier.
 
A 10kg leg ham, cured with Brendan’s signature blend, has been barrel-aged for six months in a maple syrup cask that previously matured our 5-year-old single malt. The result is a rich, savoury-sweet festive drop unlike anything we’ve created before.

Tasting Notes:

Colour: Clarified butter
Nose: Rich and meaty — salted pork, smoky bacon, spiced BBQ glaze
Palate: Sweet and salty — decadent fat, clove-studded ham, maplewood char
Finish: Wood-smoked rotisserie — charred crackle and salted butterscotch
