How we craft true single malt whisky and small-batch spirits in Timboon.

honouring traditions
At Timboon Railway Shed Distillery, we make true single malt whisky using malted barley as our only grain ingredient, processed on site in our mashing shed. Inspired by the great single malts of Scotland and the Isles, our whisky is crafted to the same time-honoured traditions — with patience, precision and a deep respect for the process.

hand made on-site since 2007
We’ve been producing small-batch Australian craft whisky on site since 2007, building a reputation for rich, characterful spirits that reflect both tradition and place. In 2020, we expanded our production with the installation of a second, larger still and the establishment of our own cooperage, ABeckett’s Creek Cooperage, right here in Timboon.

our stills
Our stills produce a sweet, balanced new make spirit that we mature predominantly in large-format ex-fortified wine barrels, including Port and Sherry casks in both American and French oak. These barrels are prepared and heavily charred by hand at ABeckett’s Creek Cooperage, located beside our bond store.
This control over cooperage is a defining part of our process. It allows us to shape flavour from the cask up, building the richness, depth and individuality that define Timboon whisky.
